The weekend is upon us and I am looking forward to taking a little time to myself to read a book, go for a swim and spend some time cooking. Cooking is something that at times can become a chore especially when you do it everyday. I have been making an effort to be more adventurous and try new recipes all the while being healthy. Ceviche is something that I have always loved but only had at restaurants or in Antigua when my uncle used to come in from fishing and prepare it fresh for my cousin and I. I decided to make ceviche my project for tomorrow afternoon and I am looking forward to enjoying the process and even more so the finished product.
